Who cares, Toph/Sokka would have been 100x better than what they did. Suki was a minor character and unnecesary imo. The producers of the show should have used Toph more. I think around the end they realized what the fans wanted, and gave them that scene at the end. Sokka may be with Suki, but he won't ever forget fighting side by side with Toph. You share those memories till the day you die.
